FWIW, this is what I have in my cabinet the KDS 21" pixel touch... (although I bought from midwest digital via ebay) I took it out of it's metal case have it mostly fit (the arse end hangs out the back a wee bit) in my smallish taito cabinet that's probably supposed to have a 19" monitor in there =P
I'm pretty happy with it -> it's basically a regular PC monitor in a heavy duty case.
How long is it front-to-back with the case off? Was it a pain to mount? I would love to have a 21" monitor in my cabinet, but I only have about 17" from the front of the monitor tube to the back wall of the cabinet; the Wells-Gardner is 16.93" front-to-back...

Those measurements were done on scrap paper that is no longer with us... Taking off the case didn't help with the total "front to back" measurement as the bottom length remained the same (if that makes any sense) It's fairly long - if you find the measurements on the KDS site for that pixeltouch it should be pretty accurate.
I cut a square hole in the back door to allow the rear end of the monitor chassis that extra inch or two it needed... also note mine is mounted in a very flat plane, i.e. I look down on the monitor when playing which helps give extra room.
Regardless, I can try and measure when I get home the front to back but I'm not optimistic. =P
I would think if you have an existing cabinet that takes a 19" arcade monitor, you'd be best off with the wells gardner and wouldn't really miss the 2" at all (plus it will be hellah easier to mount)... and you'll be able to get standard bezels for it (there aren't 21" bezels around you'll have to work something else up - but that isn't an issue for you is it, IIRC)
I only picked up the KDS 21" because I was able to snag it for 50 bucks plus 50 beans shipping --> if this place was selling 19" WG's vga style for 75 beans plus shipping back then, I woulda went with those. I'm still trying to come up with a reason to buy one anyways...

EDIT some mounting picsblurry homemade monitor mountshere's where you can see I miscalculated me shaving down the board with a hand plane, yuckit's finally in there using the metal front bracket to support it via gravity/screws/frictionSo, maybe it isn't too bad to mount if you aren't wetodded like me. *shrug*
