I notice insertcredit.com seemd to love these, as do I. Any place to get good ones, homemade or otherwise?

Dedicated to Japanese fanmade and freeware shmups. Most have Japanese help files, but it's pretty easy to get by without being able to read them.

Also, there were some great ones for snes and other consoles.  Maybe you can find some that aren't ports of arcade games, and emulate them in your cab.
