Game Cube:
Animal Crossing (Love collecting the NES games)
Pikmin
So a leper walks into a bar and as he gets his beer, a finger falls off. The bartender who is serving him turns and pukes all over the place. The leper, feeling bad, says, "Was it my finger falling off?" The bartender turns to him and says, "No, it's the guy dipping chips into your back."

I'd recommend only getting Animal Crossing if you also enjoy The Sims.  Personally I found them both interesting at first, but realized the gameplay was quite boring once the novelty wore off (and yes I know I'm in the minority in the opinion).

My favorite gamecube game would have to be Eternal Darkness: Sanity's Requiem.  Fantastic game.

Metroid Prime 1 and 2 were both good (well as good as an FPS can be with a gamepad anyway).
Super Smash Bros Melee
Rogue Squadron II

As bad as a rep that it has gotten for its fratboy image, the original Halo was a very entertaining game, especially through co-op play.  Though it too got ported.

I second KoTOR, and will say its better played on the Xbox than on the computer.

steel battalion is fun if you can find it for a reasonable price..although in reference to the video...it has to be discouraging to play games on a tv that is smaller than your controller.

as for must have games:

Gamecube:

Resident Evil 4
Ikaruga
Metroid Prime
Metroid Prime 2
F-Zero GX
and if you have a gameboy advance and a link cable, you must have Pacman Vs/pacman world 2.  in pacman vs, you connect you gba to the gamecube and you get multiplayer pacman.  the person with the gameboy controls pacman as usual, all viewable on the gba screen, while the other 3 people control the ghosts, with a limitied viewing area on the TV...it is a blast to play and a nice twist on a classic game.

as for XBOX:

Burnout 3
Dead or Alive Ultimate
Doom 3
Doom 3: Resurrection of evil
Halo
Halo 2
Legacy of Kain: Defiance
Prince of Persia Series
Project Gotham Racing 2
Rallisport Challenge 2
Super Monkeyball Deluxe
Splinter Cell Series
Ultra Bust-A-Move

not all of those are exclusives..but generally, the xbox version of most games is graphically superior to the gamecube/ps2 versions of the same game, plus if you have a modded xbox with the games installed on the hard drive, the load times are much, much better

Animal Crossing (Love collecting the NES games)
Pikmin

I'll second the Pikmin. Pick up Pikmin 2 while you're at it.

Alien Hominid or Viewtiful Joe (1 & 2)
Cel Damage is good for multiplayer fun.

Vanhelsing

You are the first person i have ever seen to recommend this game besides myself.  I love it, it feels very much like I would expect a castlevania game to play in 3d.  Very under-rated but insanely fun.

if you can find it, it's also really cheap

chronicles of riddik escape from butcher bay

I started to suggest this one but it was one of the most insanely violent games I've ever played.  Right around the time you had to find a screwdriver and stab a guy in the neck, I was done.   :-\

Well the good news is thats its being remade with better graphics and more content for the 360, so you'll be able to stab that guy in the neck in HD.   ;D

Xbox: Crimson Skies.  One of the best games on the system and no one's mentioned it yet. For shame ;)
