I just made one killer breakfast!
« on: January 12, 2008, 12:00:39 pm »
It is always awesome when you take a bunch of random things out of your fridge/freezer and combine them into one amazing concoction.  I was hungry for a breakfast like meal, but didn't have anything ready to make.  I looked around and saw the following things in my fridge/freezer that I could put together;

2 Large Eggs
Some Skim Milk
A few Crimini Mushrooms
3 Baby Onions
3 Slices of Thick, Center Cut Bacon
Two Steak-Um slabs
Some Cheddar Cheese
Some Steak Sauce
Salt and Pepper

I fried up the bacon in a pan on the stovetop and set it aside to drain on some paper towels.  I then cooked up the Steak-Um steak and let them drain as well.  When cool, I chopped them up into smaller chunks and made two piles of each.

After removing a few tablespoons of grease from the pan, I threw in the mushrooms and onions which were chopped up and added salt and pepper.  They quickly browned and reduced in size and when at my level of satisfaction I put them aside to drain as well.  Once more in two piles.

I then took the two eggs, a few tablespoons of the milk, and a small little spoonful of the shredded cheddar cheese and put it in my food processor.  I then added one of the piles of bacon, steak, mushrooms, and onions.  I whipped it up in the food processor to meld all the flavors together.

With the pan still hot and having some grease remaining, I put the egg mixture in the pan and let it cook a little bit.  I then threw in the other piles of ingredients to add some chunkiness to my mixture.  It was mixed up together and wound up being a great mixed scrambled egg mix.

When it was cooked to my satisfaction, I put it on a plate and drizzled some steak sauce over everything.

Holy good lord this was amazingly good.  It's always awesome when random ingredients work together to create the best meal you've had in a while.   ;D

Hehe.  Yeah, but at least I'll go out happy.   ;D

The only reason I didn't call it an omelette is because it wasn't one whole concoction.  My non-stick pan is no longer non-stick, so the egg stuck to the pan and by the time I worked it loose the thing was more like scrambled eggs with stuff inside rather than an omelette.

sounded good to me mate, wish i could be bothered with that in the morning rather than just cereal.
probably worth getting a new frying pan too, i think once the non stick goes their a bit dodgy. ive just got a new pottery frying pan, its awesome. glazed rather than non stick.

Yeah, the only reason why I still have it is that when I moved into my house my parents had replaced it with a better one so they gave me the leftover.  Since I had absolutely nothing, it was better than what I had.   ;)  It still does the job of cooking things, but it's quite convex in shape now so it's really difficult to evenly heat things.  Eventually I'll replace it, but for right now I can just deal with it.

I typically don't cook in the morning, but on the weekends by the time I wake up it's close to lunch time and I don't mind spending some time putting together a good meal.  This will last me until later on today when I head out to see Ozzy Osbourne at the arena near my house.  Looking forward to it.   ;D

My non-stick pan is no longer non-stick

One of lifes great mysteries.  How do they get the non-stick stuff to stick to the pan?
But wasn't it fun to think you won the lottery, just for a second there???

ooh, ooh! i know! teflon sticks to ALMOST nothing in the world. there is one thing it sticks to and that is what they use as a primer to coat the metal in first. then the teflon sticks to the primer. which is why, in the end, teflon fry pans are crap  ;)  stainless stell for me, baby!

For dinner, I decided that I need something good to eat as well.  I ended up making something that can actually serve as an awesome appetizer at a party or gaming session.

In my freezer, I have a bunch of small, 8" pre-baked pizza crusts.  I turned my oven on and set it to 400 degrees so it could pre-heat.  I then thawed out two of the pizza crusts and took them out of the oven when they were warm and just starting to brown.

Each disc got one clove of garlic, one half of a small white onion, one half of a moderately sized mushroom, or one small mushroom, some chopped up basil, oregano, sage, and rosemary.  The garlic, onion, mushroom, basil, oregano, sage and rosemary were put into my food processor and with the addition of a tiny bit of olive oil turned into a spreadable paste that could be rubbed onto the pizza crusts.

I took the paste and spread it over the surface of the crust making sure it was evenly coated.  I then applied a few slices of some mozzerella cheese that I have and covered the top.  A sprinkling of parmesean cheese then went on top of that, and the crusts were placed into the oven.  I let them cook for another five minutes or so until the cheese on top was fully melted and a nice golden color had taken over.  The crusts were then removed and allowed to cool a bit.  The cheese was nice and melted, yet the crusts were nice and crisp.

With a large knife, I cut the two 8" disks into strips and poured a little tomato sauce on the side for dipping.  They taste awesome, do a good job of filling you up, and to be honest, aren't THAT unhealthy since there was very little grease that I could notice and they didn't feel greasy going down.  The garlic/onion/mushroom combination is really nice though.   ;D

The breakfast and the awesome mushroom cheese-bread snack tasted great, but today they are creating a nasty, repulsive, painful gas explosion that it's making my own eyes water.  WOW!!!!!   :P

teflon fry pans are crap  ;)  stainless stell for me, baby!

I had heard similar in the past, so I went out and bought a really expensive stainless steel pan.  It was absolutely horrible when cooking eggs.  How in the world to you keep them from sticking?  I don't think I've ever used that pan since.

Throw in a stick of butter.  Eggs wont stick to the pan then.   ;D

I swear I tried that and even tried spraying it with cooking spray.  Neither seemed to matter.  :dunno

even a good stainless pan will take a bit of time to "season" - it will eventually come around.  cooking eggs on medium-low with butter should yield good results.  Problem with butter is that if you get too hot you'll burn / curdle the milk solids and make a huge smokey mess.

Okay.  It's Sunday so it's time for me to post another good recipe for some grubbing.  Today, it's another take on a pizza because one, I love pizza, and two, it makes a great appetizer or snack for watching a game on TV.

1):  Take an 8-inch pizza crust and let it come to room temperature.  Make sure you "pierce" the dough so that it doesn't bubble up.  (If it's a pre-baked crust then you don't have to worry).

2):  Put some garlic infused olive oil on a paper towel and rub down the dough top to infuse the flavor.

3):  Start warming your oven up to a 400 degree temperature.

4):  In a food processor, combine one jalapeno (with or without seeds.  It's up to you.), four or five large baby bella mushrooms, one clove of roasted garlic, 1/2 of an onion that is slightly caramelized on the stove top, a tablespoon of olive oil, about a teaspoon of fresh ginger, four tablespoons of a good tomato sauce, a generous handful of shredded mozzerella cheese, and about an equal part of ground parmesean cheese.

5):  Turn the food processor on and process until you get a consistant paste.  This is the "sauce" for your pizza.

6):  Take the pizza crust and put the freshly made paste/sauce onto it.  Sprinkle some mozzerella cheese on there and put whatever toppings you want on there.

7):  Put the pizza in the oven until the cheese melts and starts to brown.

8):  Take the pizza out, let it cool a bit, then cut it up and enjoy.

It's a unique modification to pizza with an odd asian/mexican type taste to it due to the ginger and jalapenos.  A great little snack.
