Lets try and list all those Incredible arcade games that you just need the original machine to play.
I'll start with The First Funky Fighter:

Galaxy Force II for one. But the pic on KLOV sucks, it's the Pathetic Model. The model I drooled over was the Super Deluxe Model and it ---smurfing--- rocked! For a long long time I hovered around that cabinet. First because I was too little to play and later because I never seemed to have enough tokens on hand to try it out.

Of course, the elusive... and expensive Sega R360 puts even the Galaxy Force II cabinet to shame.

A little less exotic? I would place my vote on just about any vector game. Standard MAME never seems to get that ---Cleveland steamer--- right.

I've never played it, but the idea of seeing how hard I can throw a punch combined with knocking down buildings and giant enemy crabs with my fists really makes me want to play it.

SilentScope - Can't really emulate that eyepiece view, and it's impossible without it.

Crossbow - Yeah, you can play it with a mouse or a lightgun.. but it's just not the same as sighting down that crossbow...

Boot Hill - it's emulated, but the plain old b&w pixels are boring as heck.  It's unbelievable how much difference the artwork and the mirror setup in the real cab makes.

Street Fighter (not Street Fighter II, the original) - Can't emulate those pneumatic pushbuttons.

Holoseum - can't emulate that display.

Beatmania and all 13 mixes

You can not buy (or make) a true authentic controller for mame for beatmania. You can buy a iidx controller, but the turn table is too low, etc. Plus you can not emulate the blue and red flashing lights when you miss a note.

I was lucky enough to have a hologram traveler at my arcade.
But I never sat down to play it because of the price.

Stunt Cycle ....... my kids would love this game, but since it had no ROM files (just circuitry) it can be not be emulated.

Virtual Reality Games would be tough...I can't find a good image, but I remember one from about 15 yrs ago, a first person shooter where you wander a multilevel platform avoiding pterodactyls

Prop Cycle - Pedaling an exercise bike in front of a big screen doesn't sound like much fun, but it's a great experience.

Cosmo Gang - A redemption game that's worth playing. Plastic aliens move down a track towards you while you use your light gun to try and shoot the sensors in their mouths. If they make it all the way to you they steal your energy-box thing and try to escape with it. The characters were later in two other video games, but they paled in comparison to the monstrous redemption game. The bonus rounds of Cosmo Gang - The Video are based on the redemption game.

Cosmo Gang was awesome! I loved playing that as a kid.  It would get pretty intense towards the end when all of the aliens are hauling ass towards you

I'm not sure of the name of this one... but it had a huge rafting paddle on it and you sit down and paddle like a madman on water rapids while being chased by a t-rex dinosaur.  Lots of fun, especially with a partner, as the seat was made wide enough for 2 players.

I don't think you missed much. We had one at the movie theater where I worked in the early 90's. I played it for free after hours. Visually it was neat but the gameplay was bland and the acting was horrific. It really wasn't a good game. Meanwhile, the NeoGeo (Baseballs Stars 2, World Heroes, King of Fighters, Fatal Fury)  next to got rocked on a nightly basis by the staff.

I worked at Dynamo and we made a run of about 500 of these one summer.
We all took turns playing it. It was a lot of fun.

My local chuck e cheese had a cosmo gang.  As a kid it was my favorite game there and its a shame that they dont have it anymore.  That might be a diy project for another day.

"can be not" ??? That's a strange arrangement. Do you mean, "can not be"?

Anyways, that's not true. Simulating this game can be done. However, it's more to do with MAME's current policy framework than any technical reason. I'm not saying it's technically easy though.

yeah, prop cycle was great. i found it really immersive. but if all they have to do is fix the sound, then you actually COULD emulate it at home...

Optical encoder wheel on any exercise bike or really any 360 wheel/spinner would do that just fine.  I've been toying with the idea of doing that on the flywheel of my elliptical for quite some time.

i pray for a day that Daphne team finally emulate those 2 games. tho i dunno how i would be able to play those game with controller that those 2 game uses. FireFox is possible but i dunno about Freedom Fighter.

oh that's awesome.  i never played it either.  i saw it at the local showbiz pizza (now chucky cheese) and the local mall arcades but also never played it b/c it was always 50 or 75 cents.

we had a sonic blast man in ours and there was a huge 360lb guy that came in all the time and usually broke it before he finished his game everytime he got on it.

the catch to get everyone playing it was if you beat his score you get $25.00 in free tokens but I dont think anyone ever came close lol.

virtual racing deluxe sit-down model was cool becuase the seat moved/shifted and vibrated it had like a air or gas charged seating system that was probably cooler then the game..

another good old classic was the tank game you put your eye's up to the visor and it had a vector look to it when you looked into the visor and it had the 2 tank/tron like joysticks.  battlezone???

You can watch it... you can't play it.  I have never found a DVD player that has a remote response time fast enough to make the game at all playable.

I realize that (I have it...a copy), but it doesn't really matter. The game wasn't very playable in the arcade either....

I used to play it and liked it quite a bit.  There was one in a practically abandoned arcade near UMass in the late 90s.  Still worked really well.  That's why I got the DVD and tried about ten different DVD players trying to play it at home.  Never did get it working.
