I am trying to find the easiest way to get the 25c insert for my coin reject button to be lined up with the other.

It's not difficult to remove the assembly.  Just remove the 4 nuts on the inside corners and the whole thing comes off.  From there It's pretty simple to figure out.

Actually just take the coin chute out of it's holder, take those two nylock nuts off (1/4" nutdriver), and slide the coin trough backwards. Watch out for the reject button spring so it doesn't fly out. The button just slides out now.
