i don't play fighter games. just vertical shooters and beat'em ups. would i be happy with the mayflash 'arcade stick in a box' or should i build my own controls with a ultimarc ultrastik 360?

No one can answer that question except you...controls are perhaps the most subjective arcade cabinet part.  What are you trying to do? MAME? Console games?

Then you don't need a U360. A U360 is best for someone who wants to play classic 4-way games and 8-way games.

Sounds like you need a Sanwa JLW-UM 8 or something similar.
