Don't worry about the amps. As long as you have more than you need, it'll take care of itself - the devices will only pull what they need.
You could just use the 12v rail of the power supply and set up voltage regulators for common voltages - 9, 6, 5, 3, etc, but you'd need to be sure that the regulators WILL handle the current draw. 78XX series regs are cheap, pretty stable, and easy to work with. Then, just add connectors as required and off you go.
That said, why? One power supply problem and you blow all your devices instead of just one.
