MAMEing a big driving cab?

I've seen some home built driving cockpit machines, but wondered if anyone knows if it's possible to modify a Ridge Racer / Daytona / Pole Position / Outrun (ETC) machine to run MAME. I.E. Are those sorta machines too far removed from the JAMMA standard to even consider it.

I was thinking about buying a Ridge Racer / Daytona sitdown, but it seems much better value for money if I could alternate between the origial boards and my PC / Dreamcast, etc.  :D
