That grey thing there is the flyback. You may need to do some desoldering to remove it, but you can. I would have to ask what the need is though.
Sounds like you've already read up on discharging, so you've made a connection between chassis ground and the anode on the tube using a probe or a screwdriver connected to a wire or some such right? Now just connect that probe/screwdriver to the metal connector coming out of that big red wire, the one that use to go into the anode. That will ensure that there's no charge on that end either.
