I have just purchased an Epson 7800 PRO A1 Printer. Which Paper Roll should I buy to enable me to print control panels? Should I then laminate it? If so which laminator should I buy?

For control panels, you will probably want to protect the art by a sheet of plexiglass or lexan. In that case any paper will do that suits your level of desired print quality. I recommend a glossy type of paper for a nice effect.
If you don't want to have a sheet of plexi, you will have to print on different material such as vinyl. For example this:

. I'm not sure if you also need special inks or the compatibility with your printer. Since you're printing, I'd still recommend going for plexiglass to protect your artwork. For the sideart- this might suit your needs.
