Newb ArcadeOS and mame problems...

Alright, I just got ArcadeOS up on my dos machine.  I've got it all plugged up to a cheap double dragon 3 cab which, surprisingly, has a wells-gardner monitor.  I'm having just a few problems with it, though.  

1) There is a shadowing situation.  At the end of each letter it trails off in different shades of gray until its black.
2) I'm getting alot of lines on the screen, but I know that I can fix that with a new refresh rate
3) MAME won't load any roms.  When I load Galaga it gives me an error and when I load Ghouls and Ghosts i get a "no 16-bit 640x480 VESA mode available" error.  ZSNES, however, will load roms.

I'm thinking AdvanceMAME will help me out on some of this, but I'm not sure.  Any help would be great, thanks!
