Wood grain in Illustrator 10?

Can anyone give me any pointers with regard to making a woodgrain effect similar to the following in Illustrator 10?:

This version of Illustrator seems to be lacking the Tracing Options, or at least I cannot find it!

The trace tool is now livetrace. The options are at the top of the screen, and the options are now inside of a wizzard. It is strait up amazing. http://graphicssoft.about.com/od/illustrator/ss/sflivetrace_8.htm

Thanks but I have Illustrator v10 (not CSx)...

I am having trouble in the 'Trace and Expand' section of the tutorial, I cannot find 'Tracing Options', if anything like that even exists in v10.
