Admin buttons

I'm looking to buy two ultimarc U360 sticks for my MAME cabinet.  Each stick can support 8 buttons: 6 action, 1 coin and 1 start.  Am I going to be able to pause/quit with this setup without using a keyboard?  The wiki said I can use a shift function, but was fairly vague about how to actually do it.

Does the U360 support something like holding down Player Start and hitting Button 1 to pause, Button 2 to escape, etc?

Will I need to get a 3rd controller to handle admin functions?

MAME can use 2 button combo for mapping. Howover you could do use same button for both start as well credits, so you have 2 buttons left for quit and pause (one from each joystick).....

Also, from Ultimarc's website:
 "The new shift button functionality works like this:

Button 8 is the shift button
This button has its normal function, unchanged
In addition to its normal function, when held down, it will activate "virtual buttons" 9-15. Any other buttons pressed will register as 9-15 instead of 1-7.
In MAME you might wish to configure, for example, button 9 as "coin". Then holding button 8 and pressing button 1 will generate the "coin" signal.
You can test all button functions by going to Control Panel, Game Controllers, Properties."
