Right Handed Multi-Console Joystick for someone to build for me

I was wondering if anyone can build a single player, right handed (or ambidextrous) joystick for me that works with the following systems (in order of priority, it might be expensive to order all the adapters at once and instead get the adapters piecemeal as I get income):

360
Wii Ext.
Game Cube
PS3
XBox
Dreamcast
PS2/PS1
N64
Saturn
SNES
Genesis
NES
Master System
7800
5200
2600
Astrocade
3DO
Jaguar

And cartridges to go in between the respective game and system to let me plug in new sticks for the following machines:
Intellivision I
Odyssey 2
Arcadia 2001

Also, is it easy to adapt a PC flight stick to act like an analog stick for a console?   And a way to let a digital stick act as a less sensitive analog stick (for games that aren't controlled by D-Pads but analog sticks)

I understand this is my "wish list"  I may not get all the items on the wish list, and certainly not all at once, but it doesn't hurt to ask.
