Xevious cab\jamma multigame conversion

I was able to get my hands on a nice Xevious cab with wiring and monitor intact.  I would like not to destroy the original wiring.  Should I

Wire a jamma harness leaving the original harness intact.
Desoldier the original harness and wire in the jamma.
Use a fingerboard to convert original harness to jamma.

I have ok soldering skills but would like to keep this thing as intact as possible.

I once made the mistake to turn a Crazy Kong Cab into a Mame thing.....don't do the same mistake....
get a Xevio(u)s PCB and make it original :)
