Probably a dumb question, but I'm not sure.

Any advice, or would I need an apac just for the pedal? :)

optipac is for digital input. Potentiometers are analog.

If you don't have the optipac yet, the U-HID can do both mouse type analog (aka relative analog) and pot type analog (aka absolute analog).
