What is the smallest joystick around? By either footprint or depth? Including mounting plate?
It seems like the ultimarc e-stick is the smallest because of the way it mounts.
Anybody seen special small joysticks used in cocktails?

The ball top joysticks Nintendo put on its 80's cabs (Popeye, DK, vs. cocktails, etc.) were frickin tiny. Their action was terrible, but they were only about two thirds the size (ball and height) of a modern ball top.

I think your best bet would be one of the japanese joystick manufacturers - either Sanwa or Seimitsu. Their joysticks take up very little space underneath the panel.
I bought a Seimitsu joystick from Suzo some time ago, and Sanwa joysticks can be bought from Ultimarc.
