As you know, there are major challenges trying to do this.
1. First, the monitor accepts inverted color. Needs a color inverter.
2. The power supply and control panel, coin-door and Monitor all use non-standard connetors.*
3. The board wiring also uses non-standard plugs.*
4. The Monitor, switching power supply and marquee light all run on a non-standard voltage, 100VAC instead of 110VAC.
* Non-standard, in this case also means the connectors have not been available since 1982.
If you are willing to
A. put in a Switching power supply, that taps in after the switch, but before the isolation/drop-down transformer.
B. Use the edge connector to plug in your nintendo boards.
C. and Rewire the control panel.
Then it can be done. Basically, you are rewiring the cabinets DC wiring, changing out the power supply, bypassing the sound amp on the monitor, and adding a color inverter.
