On my Supergun, I hit the Test button and it puts me into the game's Test mode where I can change a number of things about the game, such as # of lives, difficulty etc.... and was wondering if you could do this with the games in MAME? If so, how?

Hit TAB. If you want the games individual service mode, hit F2, then F3 to reset.
