Any will do the job, but I'm partial to the Microsoft Sidewinder Forcefeedback 2.  Unfortunately the force effects of Afterburner are not emulated by Mame, but it's a spectacular stick for all the other Windows based flight games.  I picked up two of them on clearance at Wal-mart for $40 a piece about a year and a half ago.  Two months later they had the non-force version for $60.  Go figure.

Any old will work, but remember the throttle in after burner is analog, too.  So: a 2 axis + throttle set; or any two, 2 axis, analog sticks; or a 3 axis stick, to get all the play.  Trackball + throttle is okay, too.  You may have to remap the throttle in mame.
