What wire should i buy to wire the buttons and joystick? single core or multi core?

Use stranded 20 or 22 AWG wire. I like 20 AWG because there is more "meat" to crimp the connectors to.

Yep.....

Plus single core can break if repeatedly moved back and forth in the process of wiring a panel....
