I am going to connect a P360 joystick to my dualshock 1. Is there any way I can save and use the two analog sticks (maybe to connect to rotary stick or wheel or whatever else analog) ?

they can be desoldered off if that is what you mean.

I want to know if after I performed the dualshock1 to p360 mod, can the 2 analog sticks be used for something else? I have heard of them being used for other purposes like being connected to a rotary joystick

The sticks are just two potentiometers, a switch, and the sticks themselves.  What exactly would you be trying to accomplish?
