I never had a Gamecube and now that I have a Wii which will play Gamecube games, I figure getting some of the GC greats would be a good way to pass the time until more Wii games come out.

So far I think I'm going to get Zelda: Wind waker, Resident Evil 4, and Super Mario Sunshine. 

What are some of the other must have games that I should be getting?

I'll also be picking up a wavebird so I can play them with the proper controller.  The great thing is since these games are a few years old, I can get them for $20 or less.

I second eternal darkness.
Back in MY day we lived on the moon and we had to build a rocket ship from scratch to get to the Earth before we suffocated.

I just ordered Super Mario Sunshine, Resident Evil 4, and Eternal Darkness which should keep me busy for a while, plus the games were only $40 total before tax and shipping.  Good times.

Thanks for the recommendations, I will probably buy some more Gamecube games later, but I suspect for now these 3 should suffice.

Mr. Driller Drill Land is a must have import.  Super high production values, best soundtrack I have ever herd in a console game.

Pikmin 1 for sure.

I also thoroughly enjoyed Wave Race: Blue Storm, it's challenging to learn, but a great racer. I also like Marvel Super Heros, Rise of the Imperfects. The story mode is REALLY boring, but I can't tell you how many hours of fun I had playing it with my Nephew. I also really enjoyed Animal Crossing. My wife used to fight over who's turn it was to play. After a few months of playing it every day for an hour I got bored of it. If you aren't into mindless collecting it's not that interesting. I was hoping the DS version was going to have a better multiplayer system... until it gets a realtime multiplayer system it's not going to reach its full potential.
