Rotary Panel layout ideas

I'm running out of stuff to do./build for my cabinet.  So now I am planning the dual rotary/dual spinner/analog joystick panel.

I have no idea how I will layout the controls to be most effective.

The panel will feature:
(1) Ultimarc UltraStik360
(2) Happ optical rotaries
(2) Turbo Twist spinner with 3" silver knobs
(?) buttons

If you are right handed, do you mostly use a rotary stick with your right or left hand?
How many buttons would you use for analog and 49-way games?
