Joystick height and CP thickness considerations

This is my first CP so I want to get it right or at least know how to have gotten it right. I'm planning on getting a pair of Happ competitions and a set of the SlikStik aluminum replacement handles. I know the replacements are 1/4" longer, which is nice, but that means I have to decide how to mount the sticks.

My CP is 1/2" ply with 1/8" Lexan for a total height of 5/8"  I can top or under mount them, just need a little advice on what the right height would be (comfort). I have pretty big hands if that matters.
