I'm not sure which one to go with, or if it is even worth it.  Reading about the Ultimarc 4/8 Way, it seems tha they have restrictor plates in them, so it sounds like they should work exactly like a 4 way if it is in that mode.  However I'm not sure about the Happ 4/8 way joystick. 

Can anyone with experience with these joysticks let me know if they really do what they say and which one is the best?  Or do you think I should just get a dedicated 4 way joystick and add it to my control panel?  Thank you very much!

The Ultimarc, and the Groovy Game Gear 4/8-ways are both easily swappable from one mode to the other.
The Happ 4/8-ways require you to swap out parts on the stick itself to swap modes.

The Ultimarc/GGG ones give you a real restricted 4-way when put into 4-way mode.
The Happ 4/8-ways are really just 8-ways with a smaller actuator, so that you can't hit the diagonals.

Happ makes some nice DEDICATED 4-ways, but their "swappable" ones are really bad in 4-way mode.
