How many PS2 or XBox games actually take advantage of the analog buttons, aside from driving games?

I think most games use them to some extent, although its usually just minor stuff like how high you jump or whether you run or walk when you push the button.

Not really. 

The triggers are often used in analog mode, but the buttons rarely are.  Actually, in the case of the xbox, analog buttons (not the triggers) are NEVER used.  This is because, as you said, driving games are the only ones that really use them and by default the gas and brake on all xbox racers are mapped to the L and R triggers.

well I don't know about the xbox, but I know thats not true on the ps2.

Triggers are definately better then analog buttons for racing games, no question about it.

The xbox's triggers are the best in the business... spring-loaded full analog sensitivity. They are less of triggers and more throttles. I'm glad to see them return on the 360, I just wish sony, would get with the program, design an original controller for once and make something equally cool.
