You might want to try to find a Space Encounters steering yoke control.   IT moved left/right and in/out (rather than up/down), but it would still be a "yoke" and I bet a lot of people have these lying around since the Space Encounters cabinet is not something people like to fix up ......

just a thought ......

Is the Space Encounters yoke analog, though? I have a similar yoke in my Space Tactics cab, and it is basically an eight way digital joystick with microswitches.

I gots one (and yes, it is analog) that I wouldn't mind seeing in a MAME cabinet.

I am in Canada and all the buyer pays is shipping IF the buyer swears not to deprive a true SW restoration of a true SW yoke.
