TECH: Dedicated Xbox driving cab?

I have a Cruis'n world sitdown driving cab that I am getting ready to convert into a dedicated Xbox machine:

I want to use my 25" Cruis'n monitor - Is the Ultimarc Xbox AV adapter all that is needed?  What kind of graphics quality should I expect using this monitor?

I'll be mounting a Forza Speedster 3 wheel to the cab.

I can't tell you anything about graphics quality, but I can tell you that the Xbox w/ the Forza wheel is not as good as a PS2 w/ the Logitech wheel.

Although I prefer Forza to GT4, the force feedback on the Logitech wheel really improves the experience.

Also, if you haven't already, I would recommend checking out the TOCA games.  I loved TOCA 2 and 3 looks even better.  I am not sure if they support FF wheels (I played it on Xbox), but I would guess that they do.

I know but unfortunately there aren't many good choices for the Xbox and from my research this one has rated the best.

Bah, enthusiam dashed, its a USB device, and those adaptors wouldnt work :/

Edit: Apparently it works on the PC...

The magicbox type adapters - http://www.play-asia.com/paOS-13-71-2b-49-en-70-1gk.html but the sterring wheel uses USB not the "standard" Playstation type controller interface.
