If I understood your post correctly, you want to build your own control panel for an Xbox and play fighting games on it. Its been done many times and there are a ton of plans and blueprints floating around if you spend the time to look for them. 1.4mm is incredibly thin and I cant imagine a CP being very durable with that thickness. If you want to take the time and make it yourself, there are a lot of people here that can help, but if you don't have the tools or time to design and build a box of your own, I'd recommend going with one of the following pre-made products.

127mm (1/2 inch) is probably the thinnest MDF you would want to use for the top where the joystick and buttons are.

good luck on the projects, I think it would be wiser to post feedback tho once you've got the things built  ;)

as for optical and microswitch joysticks, if you want optical your going to have to go for Happs P360's, you aint never gonna find Sanwa Optical Flash sticks anymore, I know this because I have sold 4 that i owned within the past week for a premium ! they aren't made anymore so they get snapped up at silly prices ( $280 USD for 2 sticks. . . .  :o )

that it would be possible to get sanwa optical sticks from Japan in about 2-3 weeks?

if thats true I'll buy a couple of dozen if the price is right, but if Rod @ Himura games cant get them anymore, none of the chaps on here cant get anymore and I cant get anymore then seeing is beleiving. if they can get them then I sold mine at the right time  ;)
The Sanwa's that Gremlin sell are JLW's or at least the ones they sell on eBay are

Happs now own the rights to the optical sticks, i think this is why Sanwa had to stop producing them

I really dont know, I have never used a P360, US style sticks whether they are optical or not really aint my thing.
the Sanwa Flash tho are smooth as silk to use and extremely accurate.
I thnik if I had spent more time using the Flash sticks I did have they would have been my favourite sticks, but as it stands I still prefer Seimitsu sticks.

back on topic of stick builing and whatnot, can I ask, why do most people use wood when building sticks ? what about a sheet of metal cut to size for a thinner but still sturdy CP, same as the ones found in Japanese Candy cabinets. some japanese buttons are way too short to be used on a wooden CP, I know  mrlowalowa plans to use competition sticks but it is soemthing that I have often wondered

I believe them to be the same joysticks with differnt tops, just like the wico opticals are. But the flashs have the Sanwa cord thing on them so I could very well be wrong though.
