While Golden Tee Fore does use a Jamma Harness, it is not wired "standard." Power to the board is not routed through the harness.
You can pick up a Golden Tee Fore 2005 board on Ebay. The things you will need to make it work are: PCB, hard drive, power supply. I suggest you buy an auction that includes all three (at least the PCB & Hardrive as you HAVE to have those). You also need a wiring harness to connect the trackball to the PCB directly (I made one) and an IDE cable to connect the hard drive to the PCB.
When you find a Golden Tee Fore 2005 PCB setup on Ebay, keep in mind that it could have started as a Golden Tee Fore 2002, 2003, or 2004 that got upgraded each year. No biggie, just be aware of that.
Also, you will see that there are Green Boards and Red Boards. The Red Boards are newer than the Green boards and use a standard ATX power supply, so I would recommend getting the Red board if at all possible.
As for the monitor, a Betson Imperial 27" Multisync will work with the GT Fore board at Medium Res and is less expensive than a dedicated EGA monitor.
