I have actually just started building my first Mame cabinet but have always been a big fan of the Megatouch machines found in most bars.

not personally aware of software to emulate these machines. Software is available that supports using a touch screen for a jukebox however. See this forum for details on which supports this option. http://forum.arcadecontrols.com/index.php/board,5.0.html
