I want to build my own arcade controls!
steering wheels and joysticks

are regular PC joysticks and steering wheels compatible with MAME? or just some games? or does it depend on the individual joystick/steering wheel? or does it need to be hacked somehow?
any answers would be appreciated
thanks!

Yes for the most part. Some arcade driving games (approx. half of the ones in MAME) used a 360degree wheel (like a big spinner). PC wheels are no good for these as they spring back to centre - a spinner or real arcade 360deg wheel is the only real solution here.

You can play the 360 degree wheel games with your trackball or mouse, too. Trackball would probably work OK, mouse will suck.
