Surround Speaker Setup

I need some opinions on speaker setup for the cabinet I am building. I am turning an older car stereo set into the speakers for my cab. I have already modded pc power supplies to power the amps and have 2 sets of 6x9 speakers and 1 set of 10" subs. I am going to use speaker enclosures to put on the sides of the cab to house the subs and 6x9s. I want my Cab to also be a jukebox but the main two functions of it will be MAME and Music. Should I set up the audio in a 5.1 surround or should I leave it as 2.1? Does 5.1 offer anything more to the music or does it alter it at all? I just need some opinion as to how the surround speaker setup will effect music quality.

I have 5.1 in my cab it sounds great in the cab but I am building a Jukebox because when the sound is turned up high the cab rattles a bit. Also if you are going to remove the speakers out of their cases it does effect the sound.

For a cab I would stick with 2.1

Thanks for the suggestion. I will just split the audio from the single channel sound card output to both amps.
