Does Wells Gardner make any monitors between 19" and 25". And would a 25" monitor fit alright in an Asteroids or Defender cabinet normally suited for a 19" monitor, while still allowing a decently visible bezel also?

NO! Wells does not manufacture anything inbetween those two sizes.
No, a 25" monitor would not fit in an Asteroid cabinet. There is not enough depth to the cabinet plus it would require a shelf mount monitor anyway. A 25" tube is longer than a 19".
