Mortal Kombat 3

What kind of joysticks does MK3 use because today my school went to a cue club and they had a few arcade games, Mortal Kombat 3, Golden Tee 2K, etc.  I screwed with the joysticks (the machine was off) and they were really quick and not "clicky" at all, so Im assuming they're leaf?

No. They use microswitches.....atleast, Midway sent them that way.

That's crazy if microswitches are that quiet!  When I pressed some of the buttons, there was a slight click sound but nothing at all for the joysticks!

They could have been different joysticks put in by the operator that owns them. At the movie theatre i used to work at we had a Marvel vs. Capcom machine that had leaf joysticks in them, which originally came with microswitch joysticks if i am not mistaken.

A Mortal Kombat on location would not have had 49-way sticks, it can't use them.

A converted game might have anything, most ops wouldn't bother installing the joysticks that came with new kits if the old ones were still in good shape.
