Does anyone have links to sites with info about these arcade machines such as how many models there are, button layouts, which games were used in which, monitor size, rough 2nd hand price guide etc?

They almost always have either a Neo Geo layout or a SF 2 layout, the panels themselves are often drilled for the 7 button combination layout, but they often have button plugs in some of the holes.
There are DOZENS of models of them. But unless you live in China or California then you aren't going to have a lot of choices, you'll pretty much have to take whatever you can get and like it.
As for what games came in them, pretty much ALL games came in them from 1993 onwards, except for driving games.
They are almost always come without a gameboard installed, and will often have the generic factory marquee for the cabinet, instead of a game specific marquee.
These things are fairly cheap for the importers, must be if they can sell the lesser models for under $300 in California.
