Console Games - Arcade Cabs

Still in the planning stages of my CP, I would like to lay it out in the Slick Stick Layout format. Question I have is how do you guys/gals map a complex controller like the N64 or even the PS2? Sounds like it would be rough to try and hold true to all the formats/emulators. Any suggestions besides porting a controller?

I personally just got adapters for my n64 and ps2 controllers. the hang off the sides of the CP in little gun-rack type things.
I miss Retroblast :(

The ps2 is not a problem because Only a small subset of ps2 games are really playable with arcade controls.  These don't use more than 6 buttons. Most of them use 4 or less.   

The ps2 games I have for my arcade:
Soul Caliber2
Tekken tag
tekken 4
Guily Gear x2
Capcom vs snk2
Gradius V
R type final
Castle Shikigami 2

For the n64, an adaptor would probably be best.
