Hello,
I have a Star Wars Yoke that I was planning to put in a dedicated Star Wars/Empire Strikes Back/Return Of The Jedi cab.
Would the AKI Analog Kontrol Interface be suitable for this purpose. Could I connect the coin door switches to the interface without any trouble. I guess what I am asking is can the AKI handle all the interfaces for both coin door and controller without having to use any other interface?.

Yes.
It has 5 axis (x, y, z, p2x, p2y) and 14 inputs (4 fire buttons... so 10 extra for coins, starts, ect)
So you will use the x, y, p1 - 4 for buttons and p5 - 6 (for coin and start).

You can also try to GameCab. As thats how is interfaces his homemade Yoke.
