Configure Controllers ... not working for PSP and Nintendo64

I had someone build a machine for me awhile back. 4 arcade joystick controllers ... the machine has a Raspberry Pi4B+ board, and uses Batocera. I'm looking to configure some of the controls, but am having difficulty.

So, when my machine is on ... while in some systems (like Arcade [MAME] or NES), I can load a game, and press B+Select to pull up the game options. This lets me do things like configure the buttons or add a different controller.  HOWEVER, under some systems games, like PSP  or Nintendo64, when I press B+Select ... no game options appear (and I can't configure buttons or use a different controllers).

Can someone tell me how to do this through Batocera (the frontend, without having to pull the SD card and figure that stuff out)?

As mentioned, I didn't build my machine myself, so my tech knowledge regarding emulated arcade machines is pretty limited. So please be keep things simple (if possible).
