Converting to Sanwa - Help

I have an Arcade Legends 3 and Galaga Reunion cabinet that I want to swap the US style joysticks to Sanwa joysticks with the servo controlled 4 to 8-way gate.  My goal is to have two machines that can do both 4 and 8 way to cover both vertical and horizontal games.  The Arcade Legends is a top-mount, wooden panel with carriage bolts while the reunion cabinet is the standard metal control panel.  What is the best method to convert these?  How do I adjust the depths between the metal and wood to achieve the proper ball height?  Is that done via mounting depth, or can you buy different shafts for the joystick?

Hello, Joystick can add extender to make it fit.
