The old school ones with the rca composite connection?  Nope... they are systems on a chip and said chip has a blob of epoxy on it... no way to hack into them physically.  The more modern ones like the nes/snes classic can be modded fairly easily though because they have an actual usb port to send data from your pc.  Google is your friend on those.
