How high from floor do you mount the coin door on a cabinet?

It depends on the size of the door. But generally it's closer to the top than it is to the bottom. Don't mount it too low.

Its a Happ 2 slot door which is roughly 11 in high.

Depends on your design. You should be able to feed coins easily without excessive bending or ducking.

Happ makes/distributes lots of 2 slot coin doors of different models and sizes.

Here is a picture of the coin door which will not accept coins but will use eject buttons as add a coin buttons. 

Also, here is a picture of my cabinet.  The top of the control panel is about where the side goes from vertical to diagonal for the monitor.

Don't put it in the exact center of that front panel, that'll be too low.

Do this - stand in front of the cab and reach down like you're going to coin up. Like Paige said, it should be at a level where you don't have to stoop too low to access it. Try at least 6 inches from the top and go from there.

If his panel sticks out much past the front of those cab sides/supports then it won't be accessible regardless of where he mounts it.

Also, that model coin door should generally be mounted high. As it expects a big deep coin box beneath it and many versions have a separate door for that coin box.
