Help With CRT Resolution

So, I'm running my gaming out of an old (2002) Intel(R) Core (TM)2 CPU and into an old CRT television (using a VGA to RCA converter, as the tv doesn't have S-video or HDMI inputs).

Everything looks fine when playing the games, but I can't get the resolution low enough to display the "out of game" menus and such on my tv.  It's just very blurry.  Right now, I have to have a separate monitor just for cycling through and picking what game to play, and then I shift my eyes back to my tv to actually play the games.

How can I fix this?  Do I need a better converter (currently using the $13 version), or perhaps a different video card in my PC?

Any tips would be appreciated.
