What thickness of Plexi would you suggest using for a control panel? The manufacturer I'm looking at does 2mm, 3mm & 5mm.

3mm is exactly what you need. 2mm is too thin and 5mm is too thick in my opinion. Anyway; I have always used 3mm. Both these are 3mm:
