My Cabinet only has one speaker

On my Jamma cabinet, there are two speaker holes, but only one speaker under the hood.

Is there any benefit in adding a second?  Cab will be running 90's titles, but there is a chance a Cave shooter will make it in.

Also there are only two wires coming up from the Jamma harness, what type of magic fu would be required to wire up an additional speaker if it was warranted?

That's called mono. Not all pcbs provide stereo sound. For adding a second speaker, just follow the jamma pinout and tap in to the appropriate wires, or jumper over from the existing speaker for dual mono.

ewww Mono, I had that once, I wouldn't want to catch it again  ;)

I like the jumper over idea for Dual Mono, although I'd probably go ahead and run the wiring for stereo and leave it unconnected to future proof it.

If you want to get really clever... You can install a switch, so in one position you have dual mono and in the other you've got stereo.
