You are scared that a server isn't secure, yet you have no problem using Paypal, apparently you don't know much about Paypal. (They have taken people for millions, they got me for $100).

Anyway, your credit card number is never safe, any two bit clerk at any establishment you have ever used it at can likely enough look it up. I know that I can look up the credit card number of anyone who has ever done business here at my work, and many other places are the same. Even back almost 10 years ago when I worked at the gas station, the entire back room was mostly filled with boxes, which contained our copy of every credit card receipt (including number/expiration) from the previous decade or so.
Acceptance of Zen philosophy is marred slightly by the nagging thought that if all things are interconnected, then all things must be in some way involved with Pauly Shore.

Absolutely, but it's about minimizing the risk isn't it?

Yes you're right, anytime you give up your information, you're exposing yourself to possible fraud.

Recently there was a scam around these parts where a gas station attendant was swiping cards ONCE and a phony receipt was created. Yes, you did get free gas as the transaction never went through, but your card was all set to be cloned. Be wary of even the "one-swipers".

The riskiest transaction that I can think of is in restaurants. You hand over your credit card, and it temporarily DISAPPEARS while being rung in. Who knows what could be happening to it.

But, that said.......sending out unencrypted credit card info is not the wisest of decisions.....

I went to a Jazz club and the waitress stapled the receipt to my card!  Yup, you guessed it...right through the black stripe on the other side!!!  I couldn't believe anyone could do anything so stupid!
