19-in-1 cocktail questions.

I'm about to throw together a 19-in-1 cocktail and I was wondering about how the games like joust and Mario Brothers work in cocktail configuration with 2 players. I'm assuming most games without simultaneous play screen flip.

Normally Joust and Mario Bros. cocktail cabs are set for side by side play rather than end to end -

Not sure but since the 19 in 1's are usually setup like MAME there might be a setting for cocktail mode that splits the screen if playing end to end like Mame has so that each player gets half the screen rotated to their position. Like This :
