After more thought, I decided to go with the "Under mount (support blocks)" idea, because I don't want to put mounting holes/bolts into the control panel top.
Does anyone know where I can get the necessary hardware for doing this? (I assume this will vary depending on the joystick you are using).
If you are placing an order with GGG or Ultimarc, they both carry the correct style threaded inserts for MDF.
You can make two support-bars (one for each support block) out of an aluminum or steel bar if you don't want to go with the fancy plates like EMDB did.

I was thinking of using bars. I'd prefer what you call "fancy plates", but from what I can tell they would have to be custom made and I'm not set up for that.
